Cherry Berry Strawberry Salad with Raspberry Balsamic Dressing.

As the year moves to an end and January 1 begins to loom in a slightly ominous fashion, you may find yourself examining the food choices you have made in 2020. Obviously, you shouldn’t regret any but if all reflection leads to hankering for a salad or two, then I have quite a resource to make sure it’s the best salad.

Salads are known to be lively, colorful, and nutrient-dense.  Salads are very filling and tasty. Salads of any type can be served as appetizers or as the major dish and they go with any other meal. A salad that would be ideal for combination for whatever menu that is on the table should come together in less than ten minutes.

Today’s post will be on Pear and Walnut Arugula Salad with Balsamic Dressing. A salad that turns non-vegetable lovers into believers.  This is a salad that possesses it all. It has the textures, flavors, and the taste will want you to eat over and over again.

Armed with various nutritious veggies such as strawberry, walnut, mixed romaine lettuce, and red onions. Cherry Berry Strawberry & Mixed Romaine Salad:

Strawberries | Sliced 3-6 whole Raspberries 1 cup

Mixed Romaine Lettuce Approved Greens | Or Other 6 cups

Red Onion | Sliced 1/2 cup

Walnuts | Chopped 1/4 cup

Hemp Seeds 1 tbsp

Dried Cherries 1/4 cup

Raspberry Balsamic Dressing:

Raspberries 1/2 cup

Olive Oil 1 cup

Tamarind Concentrate 2 tbsp

Red Pepper Flakes | Optional 1 pinch

Sea Salt 1 tsp

Agave or Date Syrup 2 tbsp

Fresh Thyme 1 tsp

Shallot | Diced 1 whole

Salad:

1. Place lettuce in a bowl then layers the raspberries, onion, and strawberries on top of greens. Sprinkle dried cherries, walnuts, and hemp seeds on top.

Dressing:

  1. Add all ingredients to a mixing bowl, except olive oil. Using a fork, mash raspberries with seasoning mixture. Allow ingredients to marinate for a few minutes.
  2. Slowly add olive oil to the mixing bowl, while simultaneously whisking, until combined, then pour the desired amount over the salad and serve. Store excess in an airtight container, in the fridge
